Sap!

Well, spring's coming on fast, but the Hinterberger farm isn't done with winter yet! There are still things to be done, (lack of) snow to be shoveled, taps to be tapped, and sap to be gathered. It's syrup time.
We call this one the "grampa" tree because of it's old age and massive trunk. This is the tree that, in the past, has given us the most sap of the trees that we tap, but is giving less now because it is so old.

Yes. Syrup time. We tapped these trees a couple days ago, (Jonathan, Dad, Josiah and Myself) went out there today, and voila! Tons of sap! Unfortunately there was so much that we didn't have enough big pans to put it in, so the rest is just in the mudroom waiting for some room in the sap pot. Sadly enough though, it'll still take more than 5 gallons of sap to make even a pint of syrup! But don't let this get you down; it is so thick, sugary and delicious that you don't need very much at a time to make you want to savor it.

Yes, anyway, I decided I would have to put something else in besides just sap, so I decided to post some pictures of the horses. Especially for Rachel and Paige since we have Jamir over
here.
